If you follow us (@glw.grls) on Instagram, then you have seen my sweet potato discs lately. I often make them for our lunch meetings, and everyone has caught onto this trend. They are a huge hit in our office and have become a staple in all of our diets. These sweet potatoes are lite and tight and fit well in my food combining lifestyle. Follow along below.
These make a great side and are super tasty and nutritious
Roasted Sweet Potato
Servings 2 servings
Ingredients
- 1 sweet potato sliced into discs about ¼ thick
- 1 tbsp avocado oil
- Garlic powder to taste
- Salt and pepper to taste
- Cayenne pepper optional
Instructions
- Preheat oven to 400F.
- Clean and slice sweet potato (skin on) into a bowl and add in the avocado oil, garlic powder, salt and pepper.
- Roast in the oven on a baking sheet for 25-30 minutes. Let cool.
- Serve and enjoy.
